Pumpkin Cranberry bread
3 cups all-purpose flour
3 tbsp pumpkin pie spice
2 tsp baking soda
1 1/2 tsp salt
3 cups granulated sugar
200 gm pumpkin
4 large eggs
1 cup vegetable oil
1/2 cup orange juice or water
1 cup sweetened dried, fresh or frozen cranberries
- Preheat oven to 350° F. Grease and flour two 9 x 5-inch loaf pans.
- Combine flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries. Spoon batter into prepared loaf pans.
- Bake for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.
White Chocolate Cranberry Fudge
2 cups sugar
¾ cup sour cream (not light)
½ cup unsalted butter
½ tsp salt
1 cup white chocolate chips
200gm marshmallow creme
1 tsp vanilla extract
140 gm dried cranberries
- Line a baking dish with foil and lightly spray with cooking spray.
- Combine sugar, sour cream, butter and salt in a heavy saucepan.
- Bring mixture to boil over medium heat, stirring frequently.
- Continue cooking, stirring occasionally, to soft ball stage.
- Remove from heat and stir in chocolate chips until fully melted. This will take a few minutes.
- Stir in the marshmallow creme and vanilla extract until smooth and blended.
- Stir in dried cranberries until evenly distributed.
- Pour into the baking dish, cool to room temperature.
- Chill in refrigerator for several hours before cutting into squares. Store in an airtight container.
